katsudon recipe!
Tadaima Ep.1!
Tadaima means ‘I’m home’ in Japanese. It’s a phrase we say when we come back from somewhere and it’s usually accompanied by ‘are you hungry?’ or ‘do you want something to eat?’ with food already ready. I’ve missed my mom’s cooking so convinced her to do this very casual and candid series with me 😌. Excited to spend more time with my mom and share recipes from my childhood in the home I grew up in!
This weeks recipes
Katsudon: Finally sharing my mom’s katsudon recipe. It was a bit difficult to write up this recipe because she never uses measurements and makes it slightly different every time. You can see in the photo its not one slab of tonkatsu, but smaller pieces of tonkatsu. She uses pork tenderloin instead of pork loin chops because you can make thicker cuts for a juicier and more tender tonkatsu. It also cooks faster (great for home cooks), get more of that delicious panko coating and you can have both the tonkatsu soaked in the sauce (traditional) and top it off with crispy tonkatsu for textural contrast.
Tamagoyaki Scramble: A meal I make when I don’t know what I want or don’t feel like cooking. It takes me under 10 minutes to whip up this meal and I loveeee the soft scramble texture!
French Toast Bagels: A very non-traditional bagel dough from the eggs added but they’re incredible. Especially with that crunchy sugary topping! I love it with a thick layer of smoked salted caramel and apple pie filling.
Cinnamon Roll Bagels: These are so fun to make and they’re not as heavy as regular cinnamon rolls so I love having them on the weekend for breakfast or as a snack. They’re really good with some slightly sweetened cream cheese.
Gochujang Caramel: I had this recipe sitting in my drafts folder collecting dust for years, but recently made it again for some apple crisp and ice cream. The slightly spicy element to it pairs so well with vanilla ice cream and sweet cinnamon-y apples!!
This Weeks Favourites
Ninja Food Processor: I’ve tried 4 different food processors in the last year and a half and I finally found one that I LOVE. I’ve been using it for 6 months now and I don’t even touch my other ones (or they broke, lol). This one chops everything evenly and I’ve found the easiest to clean. I bought one for my mom (she has arthritis in her hands) and she uses it to chop everything now. It’s super cheap compared to the other ones I’ve bought so if you’ve been looking for a solid food processor I highlyyyy recommend.
Okay, I’ve never been a taco person but wow. I went out for tacos with a couple friends and WOW. These were really good. I had the blacked fish taco, carnitas taco and fried chicken taco. The blackened fish taco was my favourite! Next time I’m going to try the Baja fish tacos, my friends got those and they looked amazing.
